Sunday Funday

Years ago this phrase had a much different meaning to me then it does today…it used to mean heading to the bars in the afternoon with friends and drinking all day watching whatever game happened to be on at that time (but mostly just because we wanted to impress the guys we were with.  Lately it means 3-4 hours of bulk cooking for me with my two little assistants.  It’s MUCH easier (and quicker) to do it without them, but they really love to help cook and it’s some good quality time!


Ever since I started eating clean (and trying desperately to get Brian on board), I’ve found it next to impossible to maintain this lifestyle without cooking in bulk each week.  It makes for the end of an [always] exhausting weekend and I’m ready to chop my feet off by the time I”m done, but it’s well worth it all week when I can just grab my bags and container and jugs and run!  Now if only I could find a way to con Brian into doing all the cleaning, I’d be good to go!


I normally eat 6 small meals per day, and Brian eats about 600 big meals per day, so it really adds up and if I don’t have something readily available then that is when I’m in danger of stuffing my face with anything I can find!  Obviously that goes against everything I’ve been working towards lately so this is just what I need to do…I’m already having anxiety because Mother’s Day is this Sunday and I have a wedding all day on Saturday, so I have no clue how I’m going to pull off this week.


My meals are pretty boring.  I tend to find something that I like and kind of eat it nonstop until I can’t stand it anymore then I’ll move on.  I wanted to share a couple of things that I’ve been making since I’ve started eating clean.  I do think I’ll switch it up soon, I just need to find the time to put together a couple of new staple meals for myself, make a grocery list, actually get to the store to pick everything up.  


I took pics this week and some of the recipes are not mine…I will link them so you can find them.  Eventually it’s my plan to get a recipes page on here where I can catalogue them..sooner than later, I hope.


Protein bars.  You already know that I want to marry Jamie Eason.  Part of the reason why is because she has some really great, clean easy recipes.  She has a variety of protein bar recipes.  Since I’ve been eating clean, I make a pan of homemade protein bars each week.  This week I made her Lemon Protein Bars (my kids added a handful of blueberries for me).





A pot of turkey chili.  This is my recipe.  I’ll add it at some point…





A dozen Turkey Meatloaf Muffins (these are also Jamie Eason’s).





Hard boiled a bunch of eggs for snacks.





3 dozen mini turkey mini meatballs (also my recipe)…not quite as clean as the muffins.    These were actually for B and the kids.  The had whole wheat angel hair and these for dinner (Brian literally ate 14 of these meatballs before they even sat down to eat).





This usually would last me most of the week; however, I only made a half pot of chili this week since I used the extra turkey for the mini meatballs.  Brian eats the chili also so I came up a little short this week.


If you’re trying to eat clean and seem to have trouble staying on track, this is a good way to reinforce the new habit you are trying to form.  You’re much more likely to eat healthy if there is food already prepared just waiting for you to eat it!
