Weekend Treat – Clean Coffee Cake Recipe

I found this recipe on Pinterest a couple of months back before I made the jump to eating completely clean.  I had already started my “health makeover” as I keep referring to it, but I was still having cheat meals each week.  I never got around to trying it but when I thought of it the other week I decided I’d try to make it and see if I can clean it up a bit.  The premise of the original recipe, which can be found here is to only make a cup full of coffee cake: a small portion so you won’t be tempted to keep stuffing it in your face cheating until the whole cake is gone!  I really liked the idea of a small little treat and although my sugar cravings have decreased significantly, I still have a sweet tooth and am always searching of “clean” desserts to make quickly!  Give it a shot and let me know what you think!


Ingredients:
Oat flour 1/4 cup + 2 tbsp oat flour
2 tbsp butter, divided (I use the Land O Lakes Butter w/ Olive Oil, it tastes great and is pretty clean)
2 tbsp Ideal (Xylitol, you could use Truvia if you prefer) 
1/3 egg (beaten) 
2 tbsp of nonfat, plain Greek yogurt
3 drops of organic vanilla
1/8 tsp baking powder
1 tbsp Ideal Brown
1 tsp cinnamon

Directions:
Is your mouth watering yet?  Okay, so first add 1 tbsp of butter in a coffee mug and soften (if you use the LOL butter with olive oil only nuke it for about 5 seconds b/c it’s super soft already) in the microwave.  Don’t melt, just soften. Then add 2 tbsp of Ideal to the butter and mix with fork until fluffy (try not to eat it just like this).  Next add your egg.  The original recipe says the egg is not necessary and that without it “it will be more crumbly and less cakey”.  I beat one egg and poured about 1/3 of it into the mug. Stir in Greek yogurt and vanilla, baking powder and 1/4 cup of the oat flour.

In a separate bowl, soften the remaining tbsp of butter and add the remaining 2 tbsp of oat flour, cinnamon and Ideal brown and smush together with your fingers to form the crumb topping.  Add the crumb topping on top of the cake mixture already in the mug.

Microwave for 1 minute and then in 10 second intervals until it’s finished.  Watch this carefully, I burnt the crap out of my first one….woops…my house stank all night!!

I thought this was pretty yummm-o!  I would like to try to perfect it when I have a chance, try it with no egg, or pasteurized egg whites.  I’d also like to try and see if it turns out okay by swapping coconut oil for the butter.  Let me know how you like it!!

* Personally, my sweet tooth was plenty satisfied after only half the mug, so I pitched the rest, cut half the cals and went to bed happy!
