I hate to admit it, but I’m being so lazy this morning. I “slept” in until 8:00am today and I use the term “slept” lightly since my 6 year old was in my bed for a while playing her Leap Pad and my 3 year old was laying on my bedroom floor whining for about 20 minutes. Each time I asked him why he replied with a very whiny “I don’t know”, so I finally got out of bed!
While I have been getting up at 5:00am for my workouts, I decided I would not do that on the weekends and rather get a little extra sleep if and when possible. I somehow hurt my neck the other day and it’s really been restricting my activities and just hurts like hell. I really don’t like taking medicine other than some ibuprofen when necessary, but that wasn’t helping at all. I finally took a muscle relaxer around 6 last night and proceeded to pass out on the couch around 6:30. And I mean pass out. I was basically dead to the world, which is one of the main reasons I don’t like taking medicine. Aaaaaand wasted my entire Friday night, I was so bummed.
It feels the tiniest bit better today but I’m still lazy and groggy, which means that I’m being completely unproductive. My house is trashed and I have soooo much cleaning to do and errands to run, but I just can’t get motivated. But that’s what I love about Saturday mornings with my kids. I feel like it’s the only time I can just BE with them instead of rushing around, cleaning up, getting ready, etc. So while the kids were eating and I was procrastinating I whipped up some quick Blueberry Coconut Protein Pancakes. I don’t make pancakes on weekdays because I just don’t have the time so I had already planned on making some sort of PP this morning…just looked around at what I had in the house and that’s what I came up with.
Ingredients:
1/4 c. oat flour
1/2 scoop vanilla whey protein powder
1/4 tsp baking soda
1/8 tsp salt
1/2 tbsp unsweetened finely shredded coconut
1/2 packet of Truvia (stevia)
1 egg white
1/4 tsp vanilla
1 oz. water
handful of blueberries
Directions:
Whisk all ingredients together than add 1/2 the blueberries. Pour in pan and cook like regular pancakes. I topped mine with the rest of the blueberries, a tiny bit more coconut and a little bit of sugar-free syrup. (I only use a little bit of syrup since I can’t find any made with stevia).
*This only made one large pancake for me, which was intentional because I had zero appetite this morning. Just increase accordingly for a bigger batch!
