Most Sundays my kids and I make a pan of homemade protein bars of some variety. I usually use Jamie Eason’s recipes. My favorite one is her Lemon Protein Bars. It makes a great plain base and then we just throw in whatever we have around to switch up the flavors a little. The one we made last night was so good that I thought I’d post it. These are quick and easy and I often pair 2 (one serving) with some cottage cheese or greek yogurt and a handful of almonds for my Meal 2. Plus, I just have the cutest little helpers that love making them so can’t resist. My daughter named these “Fruity Protein Bars” and I promised her I’d keep the name!
Ingredients
4 egg whites
1 cup oat flour
2 scoops of vanilla whey protein powder
1/4 tsp salt
1/2 tsp baking soda
8 oz. baby apple, strawberry, banana (I used Gerber)
handful of blueberries (a big handful)
2 packets of True Lemon Raspberry Lemonade (the small ones, not the quart size)
1/2 c. Truvia or Ideal (I used a little less since the Raspberry Lemonade is sweetened also)
2 oz. water
Directions
Mix together wet ingredients in small bowl and mix dry ingredients in a larger bowl. Slowly add the wet into the dry and mix until combined. Pour into greased 8×8 glass baking dish and add blueberries. Bake at 350F for 23 minutes. Let cool and cut into 16 squares. (serving size is 2 squares). My daughter named these “Fruity Protein Bars” and actually ate TWO and she doesn’t like anything!
*Be sure to keep these in the fridge, or freezer if you won’t eat right away. They will go bad quickly since they don’t contain any preservatives.
