Easy PB Power Bites

This morning my kids and I whipped up some easy Power Bites…they liked helping, my son loved them and even though I had to threaten bribe her, my daughter (who eats nothing) had one too!  



Ingredients:
2 tbsp organic oats
1 tbsp organic chia seeds
1/2 tbsp ground flaxseed
3 tbsp ground walnuts (I only ground them to try and hide from my daughter) chopped are fine too and would add some nice crunch!
2 tbsp PB2
1/4 tsp vanilla extract
1/8 cup sugar free syrup


Directions:
Mix all dry ingredients thoroughly.  I just used a fork, but you could use a mixer or food processor as well.  Then add vanilla and syrup.  Mix to form into dough consistency, then into balls.  


These are not overly sweet.  If you’d like them sweeter just add a packet of stevia with the dry ingredients.  Recipe makes 4 balls (haha).

    Oh wow, these look GREAT! I’ve made little snacks like these before but the main ingredient was dates…good for sweetening, but it ends up making them more of an energy ball than a snack ball…ie, I’m hungry again in like 20 minutes! I’ll have to give these a try as soon as I get my peanut flour restocked!

    These look so delicious! I must try them sometimes. I also add some dried fruit to them sometimes or something like Heather mentioned about figs. I used apricots last time and they were actually quite good! :)
