Hello there! I hope everyone had a great weekend and survived back to school!! I am planning on recapping our quick trip to the beach, this week hopefully. But for now, I have a new protein bread recipe for you.
I think you all know how #instagramobsessed I am by now, (follow me @mymissionimpossible) and I found this blog through IG. I made a super easy Blue-Raspberry Protein Bread adapted from Protein Pow’s recipe.
Ingredients
1/2 cup of GF oats
1/2 cup of vanilla whey
1 cup of liquid egg whites
2.5 tbsps of coconut flour
1 tsp of baking soda
1/2 tsp of salt
1 cup of blueberries
1 packet of True Raspberry Lemonade
1/2 cup chopped walnuts
Directions
Mix all ingredients together except for blueberries. Pour into lightly greased (I used cooking spray or coconut oil) loaf pan, add blueberries. Bake 40 minutes at 170 C (338 F).
I sliced in about 8-10 slices and packed each in a snack bag. I ate 2 slices along with 1/2 cup of nonfat Greek yogurt as a meal and also brought some along for the car ride to the beach! Remember to keep in fridge or freezer since they don’t contain any preservatives! Also gluten free (but make sure to oats GF oats)!
