Well helloooo there! I hope you’re all enjoying this fabulous Labor Day! It’s been rainy and yucky here all weekend but I don’t care…I had a perfect weekend! Celebrating my [super old] sister’s birthday, picnic with good friends, lots of time with my husband and kids, got some stuff done around the house and fit in some killer workouts as well! Then this morning while I was getting ready to make my oats, I got a pancake craving so instead I whipped up these pretty little thangs! Quick, easy and super tasty! Oh yeah, and pretty…obviously!
Ingredients:
2 tbsp coconut flour
2 tbsp oat flour (gluten free)
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp cinnamon
3 egg whites
1/4 c plain nonfat greek yogurt
1/4 tsp vanilla
1/2 scoop vanilla whey
Strawberry Cream:
handful of cleaned, cut strawberries (approx 1/4-1/3 cup)
1 tbsp neufchatel cheese
1 packet of stevia
1/8 tsp vanilla
2 tsp unsweetened almond milk
Combine all ingredients in blender and set aside
Directions:
Combine all ingredients in blender (add unsweetened almond milk if batter is too thick) and cook normally! Top with fresh strawberries and strawberry cream.

Glad to hear you had a great weekend! Mine was pretty awesome too…got to make a trip to Whole Foods and Trader Joe’s, celebrated my Daddy-o’s birthday (bet he beats your sis! Lol), and finished it out with a great Pancake Sunday breakfast at my favorite pancake place here in town!

Yummm these look SO good! Coconut flour pancakes have never worked for me, not sure why. Maybe I just got the proportions all wrong. I’ll have to try these ones!! Hope you have a great day!
