WIAW is back!

Good Morning!  I’m back for WIAW today, but I’m warning you, it’s going to be a boring one! But since I’ve missed so many I wanted to post anyway :)

Spooky Snacks and Healthy Halloween Treats

As per usual, my eats have basically nothing to do with Jenn’s clever theme.  I really need to do some better planning, don’t judge!  And ps my pics are even more awful than usual!  I’d really love to take an amateur photog class.  Just one or two for them to teach me a few basics, staging, lighting, angles, camera settings etc.  Although I guess it wouldn’t help too much if I continue to take all my pics with my iPhone, oops.  It is really just such an inconvenience to bust out my camera all the time.  And who suffers?  You.  Poor readers, hurting your eyes looking at my terribly lit Tupperware pics.  Thanks for being such a trooper. Love you, mean it.

I’ve been eating all the same meals each day this week but am running out of food!  This is 1/3c oats with unsweetened vanilla almond milk, cinnamon and stevia with 4 egg whites scrambled with one wedge of Laughing Cow cheese.


I’ve decided that this is definitely my favorite way to eat sweet potatoes (remember, I’m not a big fan).  This is the sweet potato ground turkey hash I always make.  Super simple, super easy.



Chicken Stir-fry with green beans and zucchini because that’s all the veggies I had in my fridge…don’t tell Jenn that!


Grilled chicken, mushrooms and onions sauteed in coconut oil, black beans and half an avocado on Food for Life corn tortillas.  This make two although I only had the avocado this one time, trying to stay lower fat for a few weeks.

Dinner (not pictured) was turkey meatloaf and it turned out sooo good.  I added Sriracha and it had this nice heat to it, not too much, not too little!  Totally making this again next week!  I really should be adding some veggies to this meal each evening but have been heating and inhaling so fast that I haven’t bothered!


I’ve been stuck on this dessert for a few days now. I made it months ago and then forgot about it. It’s cottage cheese, syrup, stevia, vanilla extract and chocolate chips, I don’t really measure anymore, but I’ve been using the vanilla creme liquid stevia and sugar-free maple syrup.  It’s amazing.  You can find the original recipe at the Colourful Palate.


So while I don’t have any Halloween treats in the post, I did want to share something festive. Here’s some pics from our pumpkin carving/painting sesh last night!

    i am not a big fan of sweet potatoes either, more of a squash girl. i actually have been wanting to try and do some more meal prep and meal planning because i never have enough food for the week on hand making the end of the week rough. i was told to check out past posts by you so I will be creepin g around!

      Oh good! I have a bulk cooking label I think or you could search. Yeah, sometimes mine doesn’t last long enough, I just asked my husband to run to the store for me so I can figure out tomorrow and Friday! You know where to find me if you need me!

    While I do already love sweet potatoes, a good hash does kick them up another notch! And I feel the same way about photography–it would be nice to know how to take a decent pic, but in reality? I know I’ll just keep using my iphone. It’s just so darn convenient!
